It is common practice in Africa to dry maize, beans, and cassava by spreading them on mats in direct sunlight. Doing this to herbs, however, will ruin their value:
Loss of Essential Oils: Volatile oils evaporate rapidly when exposed to direct solar heat and UV radiation. Direct sun-dried herbs lose their aroma and taste, turning bland.
Color Destruction: Direct UV rays bleach the green chlorophyll in leaves, turning them a dusty, unattractive brown or yellow color. High-end spice buyers and exporters demand a vibrant, deep green color in dried herbs.
Contamination: Drying open to the sky exposes your herbs to dust, wind-blown dirt, bird droppings, and insect infestation, making them unfit for human consumption.
To get premium, export-grade dried herbs, you must dry them in the shade or inside a protected solar dryer that traps heat but blocks damaging UV light.
You can construct a highly effective solar shade dryer using locally sourced timber, insect mesh, and UV-treated clear plastic sheeting (greenhouse polythene):
The Cabinet Structure: Build a simple wooden frame shaped like a small wardrobe or cabinet, measuring 1.5 meters wide, 1 meter deep, and 1.8 meters high.
The Drying Racks: Inside the cabinet, slide in removable wooden trays. The bottom of each tray should be made of food-grade, clean nylon insect netting (mosquito net) stretched tight. This allows warm air to rise up through the layers of herbs.
The Covering: Cover the sides and door of the cabinet with black or dark agricultural plastic sheeting or wood panels to block direct light. Cover the top/solar collector area with UV-treated clear greenhouse plastic.
The Airflow (Crucial): Cut ventilation holes at the bottom and top of the cabinet, and cover them with fine mesh to prevent flies and dust from entering. As the sun heats the clear plastic top, cool air is drawn in through the bottom vents, rises up through the herb trays absorbing moisture, and exits through the top vents. This natural convection dries your herbs rapidly and cleanly within 2 to 3 days.

Moses constructed a 2 x 3 meter walk-in solar dryer using local cypress timber and UV-treated greenhouse plastic, painting the interior floor black to absorb heat. To handle rainy days, he placed a small, clean-burning charcoal stove (Jiko) inside a metal drum at the inlet vent, allowing clean, dry, warm air to channel into the dryer. He began selling premium dried tea flakes to specialty shops in Nairobi, generating a reliable income stream even during the wet season.
Crucial Things to Keep in Mind:
Spread Thinly: Never heap herbs on top of each other on the drying trays. Spread them in a single, thin, loose layer. Heaped herbs will trap moisture and rot instead of drying.
Check the Ventilation: Ensure your dryer has active air movement. Without vents at the bottom and top, a solar dryer becomes an oven, cooking your herbs and turning them brown.
Keep it Dust-Free: Clean your drying trays thoroughly with soap and warm water before every new batch to prevent dust and mold spores from contaminating your herbs.
